Roasted Greek Chicken

Ingredients

  • 4 bone-in chicken thighs (or drumsticks)

  • 3 tbsp extra-virgin olive oil

  • Juice of 1 lemon

  • 4 cloves garlic, minced

  • 1 tsp dried oregano

  • ½ tsp paprika

  • Salt and freshly ground black pepper

  • 1 lb baby potatoes, halved (optional)

  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Make the marinade.
    In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

  3. Season the chicken.
    Place chicken (and potatoes if using) in a baking dish or sheet pan. Pour marinade over everything and toss to coat.

  4. Roast.
    Arrange chicken skin-side up and roast for 40–50 minutes, until the chicken is golden and cooked through and potatoes are tender.

  5. Serve.
    Garnish with chopped parsley and extra lemon wedges if desired.

💡 Tip: For extra flavor, marinate the chicken for 30 minutes to a few hours before roasting.
