Roasted Greek Chicken

Ingredients
4 bone-in chicken thighs (or drumsticks)
3 tbsp extra-virgin olive oil
Juice of 1 lemon
4 cloves garlic, minced
1 tsp dried oregano
½ tsp paprika
Salt and freshly ground black pepper
1 lb baby potatoes, halved (optional)
Fresh parsley for garnish (optional)
Instructions
Preheat oven to 400°F (200°C).
Make the marinade.
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.Season the chicken.
Place chicken (and potatoes if using) in a baking dish or sheet pan. Pour marinade over everything and toss to coat.Roast.
Arrange chicken skin-side up and roast for 40–50 minutes, until the chicken is golden and cooked through and potatoes are tender.Serve.
Garnish with chopped parsley and extra lemon wedges if desired.
💡 Tip: For extra flavor, marinate the chicken for 30 minutes to a few hours before roasting.
